last night i cut myself a big butterscotch brownie, ate it while clint was warming his in the microwave, & was back for another one before he even sat down.
thank you for hearing my confession.
key to these brownies...
chocolate (duh)
butterscotch
salt
yes, salt. salt is vital to anything chocolate. sounds strange, but is oh-so-true, my friends.
butterscotch "get up & get another" brownies
the above is in no way indicative of the size of pieces we eat around here. the truth is this is all that was left by the time i remembered to get a pic. |
2 sticks butter, softened
2c sugar
4 eggs
2t vanilla
1 1/2 c flour
8T cocoa
good pinch of salt
bag o' butterscotch chips
325.
cream butter & sugar.
add eggs one @ a time, incorporating each before adding another.
add vanilla.
whisk flour & cocoa together in separate bowl; add 1/2c @ a time, fully incorporating before adding more.
add chips, mixing minimally.
buttered 8x8 or 9x9.
30-45 mins (vague, i know, but it depends on the type of pan used & how ya dig ya brownie. we like 'em a tidge soft in the middle, so i watch them uber-closely @ the end & pull them out when a toothpick stuck in the middle comes out just a little underdone.)
you should be able to taste the salt subtly, after the chocolate & butterscotch invade your mouth.

& cheesy & bread-y & sometimes salty. & also my tendency to over indulge in such goodness. oh dear.

am - they are!!! this is the recipe (minus the butterscotch, + jumbo milk choc chips) i use for reg brownies, too. haven't found a better one yet, but am always on the look out...
