recipe wednesday

that's how i feel about this tomato & cuke salad.
funny thing is, i don't even like cucumbers that much. i just had to find something to go with my tomatos & stumbled upon this recipe. i changed it up a little & VOILA! i haven't yet tried it with mozzarella but i will be making it again next week with the mozzarella & i can't wait! you could definitely use feta (& really it would be more traditional, i think as this is kinda greek), but i think the "blank slate" taste of mozzarella will be the best to soak up all dressing juice.

tomato & cucumber salad

5 minced cloves garlic
2 T balsamic vinegar
2 T red wine vinegar
12 leaves fresh basil
10 leaves fresh oregano
½ cup extra virgin olive oil
1 & 1/2 pints cherry tomatoes
1 & 1/2 large cucumbers
1/2 md red onion, sliced very thinly
cut 1/2 lb mozzarella into bite sized chunks
3/4 t sea salt
pinch black pepper

mix garlic & vinegars. allow to marinate.
chop basil & oregano & mix with vinegars. again allow to marinate.
peel cucumbers & slice into 1/4 in rounds.
quarter tomatoes & toss with cucumbers, onion, & mozzarella in large bowl.
sprinkle veggies with s & p.
add olive oil to vinegar mixture.
right before you're ready to eat, toss the tomatoes & cukes in the dressing & serve.
so G O O D. seriously. i could just eat this for dinner & be perfectly happy.
